Backstabs are the core punish mechanic of the game, It's personally my favourite thing about Dark Souls, the backstab meta game has more depth than anything in the sequels for me. If you're not big on backstab focused gameplay maybe try flip CB which focuses on whiff punish and out spacing your opponent.

For now it looks like pvp backstabs are dead unless they have made them work in the full game. Backstabs in pve are just as easy to do as in Dks1 from what I have seen, but in the CNT they didn't work in pvp at all. If your opponent as much as moved slightly to the right, it was enough to whiff the backstab.

Poise damage does not increase with Strength. It is a constant that is determined by your weapon. Different weapons deal different amounts of poise damage, which you can check in the inventory menu. Also i have an extreme dilemma in dark souls 2, i wanna equip the jesters top because i cant get backstabbed with it, which sounds useful, but it will ruin my fashion souls. DS1 had impossible to avoid backstabs that literally became any high level PVP, and Dark Souls 2 had still really hard to avoid backstabs, which were often abused by people wearing gear that completely prevents backstabs to them.

For a character that was facing 0, I found that I could backstab them if I was at +60 or -60 degrees. It was tricky manipulating the angles precisely, but I was able to test 60.00 at one point, which worked, while 60.02 failed.
